Allspice

Allspice is a spice unto its own. It is a seasoning spice made from dried berries of an allspice tree which resemble peppercorns. The allspice tree is also known as Jamaica pepper and new spice. Allspice can be used in ground form or as a whole. The whole berries are slightly larger than a peppercorn and have a shaggy dark brown covering when dried.

 

Allspice has a strong flavor and aroma, several berries can infuse a dish with its warm, spicy flavor and once it is ground, a pinch will satisfy. It completes a variety of meals and is usually used in both sweet and savory dishes. Allspice berries are used in stews and soups, and for pickling and brining whereas the ground allspice is used in desserts, such as pumpkin cake or pie, apple cake, and gingerbread.
