CHICKEN CHUNKS BITES

This recipe is a true kid-pleaser both ways…… Easy to make and delicious at the same time. Adults can also enjoy this recipe for a tasty appetizer, too! It is served warm with a variety of favorite dipping sauces if desired.

When you need something quick and easy, but that doesn’t sacrifice flavor, this Chicken Chunks recipe is perfect. It takes tender boneless chicken thigh and with the perfect blend of flavored spices. Kids can easily make it on their own and excite their elders with an awesome yummy snack. 

A couple of my favorite things about this recipe are that:

  • Since the chunks are cut into bite-sized pieces they cook super quickly as they are half cooked in the microwave….. So the appetizer can be on the plate fast.
  • There are no fancy ingredients and kids can have all of these on hand.
  • It can be used in different ways in a variety of recipes.
  • It is flavorful and filling, but still light and wholesome.

 

To serve these Chicken Chunks as an appetizer, just make as directed and then place the skillet on the table to pair it with your favorite side dishes,  here are some of my favorites: tortillas, hamburger buns, rice, pasta, and sauces. This is a great snack, less messy, and above all mouthwatering.

CHICKEN CHUNK BITES  

 

INGREDIENTS:

  • Bread slices 2
  • Milk ¼ Cup
  • Chicken boneless thigh  500 gms
  • Onion 1 medium
  • Fresh coriander 2 tbsp.
  • Green chilies 2
  • Egg 2
  • Chicken tikka masala 1 tbsp.
  • Ginger garlic paste 1 tbsp.
  • Salt 1 tsp 
  • Red chili powder1 tsp 
  • Oil 1 tbsp.

INSTRUCTIONS:

  • In a chopper add bread slices, milk, boneless chicken thighs, coriander leaves, green chilies, egg, chicken tikka masala, ginger paste, garlic paste, salt, red chili powder, and oil.
  • Chopper it until all well incorporated.
  • Grease a flat dish, add the mixture, and spread it evenly about 1 inch thick.
  • Microwave it for 15 minutes. 
  • Let it cool and cut it into 2 inch thick chunks.
  • In a frying pan, add oil along with chicken chunks, stir fry until golden brown & set aside.
  • Serve with your desired side.
  • It can be frozen for a couple of weeks in an airtight container.
