ROASTED RED PEPPER HUMMUS

Hummus is a Middle Eastern dip prepared by fusing chickpeas with tahini, garlic, and citrus. The best hummus is creamy, fluffy, smooth, and swirled, with a nutty and tangy flavor.

Chickpeas are the main ingredient in hummus. The other key element in hummus is tahini … a condiment made from toasted ground sesame seeds. Hummus is served with extra virgin olive oil and traditionally eaten with an Arabic bread named ‘Pita’. It’s a very healthy snack that can be eaten as a dip or added to sandwiches, or salads. Hummus also has different flavor variations:

  • Roasted red pepper hummus.
  • Roasted beet hummus.
  • Green hummus.
  • Roasted cauliflower hummus.
  • Roasted garlic artichoke hummus.

This roasted red pepper hummus is a bit on the rustic side. Creamy with a little bit of texture, and packed with flavor–sweet, smoky, and spicy! As you probably guessed, the star ingredient in this hummus recipe is roasted red peppers, which bring a little sweetness to this hummus dip.

ROASTED RED PEPPER HUMMUS

INGREDIENTS:

  • Canned chickpeas (garbanzo beans) 2
  • Chickpea liquid (aquafaba) 1 cup
  • Sesame roasted  1/2 cup
  • Olive  1/2 cup
  • Lemons 2
  • Garlic cloves 2
  • Cumin 1 tsp
  • Roasted red pepper 1 tsp
  • Salt 1/2 tsp

Garnishing:

  • Olive oil 3 tbsp.
  • Paprika 1/4 tsp
  • Fresh parsley 2tbsp
  • Olives 2 tbsp.

INSTRUCTIONS:

  • Add all the ingredients to a blender.
  • Turn the blender on high for 30 seconds, push the hummus back down into the blades.
  • Add more chickpea liquid (aquafaba), if desired, for a softer hummus.
  • Add the hummus to a serving plate and garnish with olive oil, paprika, olives, and fresh parsley.
